Menu Plan Monday

I'm not going to lie, it's been a trying week.  Physical and mental exhaustion combined with a 16 month old who just can't seem to be well at all during the winter have reduced me to some sort of sub-human species unable to control what she eats, her temper, or her general outlook on life.  I am determined to crawl out from under this rock and recenter, organize, get back to my sewing machine where life seems to work itself out, get back on the elliptical where my butt seems to work itself out and just get back to myself in general.
Not a crafty conversation but that's some real conversation for ya.

And so, with my optimism cup refilled here is my menu plan for this week:


Monday - Chicken fingers, mashed potatoes, green beans, gravy (didn't eat this last week as planned)

Tuesday - Pasta with mushroom alfredo
Wednesday - sausage, rice, peppers and onions
Thursday - sandwiches and soup
Friday - chicken tacos
Saturday - pizza (homemade)
Sunday - hamburgers and fries

After evaluating last week's meal plan I was sort of horrified by the thought of having red meat four times in a week.  Now I've resolved to cut that  back to once a week and start working meatless options into the rotation at least once every week, hopefully twice.  Unfortunately while the boys and I love beans, Drew is not a fan.  So if you have any meatless ideas that don't involve beans I could really use some!

  1. I'm with you on the beans. My girls and I love them but my husband doesn't want them often, and even then he doesn't really want them as the main dish. Too bad because they're so frugal and good for you. Wish I could be more help on the meatless dishes. We are a meat and potatoes kind of family. I hope you get some good ideas.

  2. I love beans too but when I make Veg. chili Shane wants to know, "Where's the beef??" I make a really good potato soup! I'll post the recipe on my blog this week. I have added chopped up ham to it so that it has a little more substance for Shane but I love it as-is. Thanks for sharing your meal plan again!!

    Oh - btw - sometimes just making it through the week somewhat sane is an accomplishment, especially after how your week has been. You'll have better days ahead, just maybe not all in a row. That's motherhood! :) Love you!
